Spicy Beef Noodle

For the Broth:

  • 1 large onion, halved and unpeeled

1. Char the Onion and Ginger:

  • Preheat your broiler. Place the onion and ginger on a baking sheet and char under the broiler for about 15-20 minutes until they are well-charred.

2. Prepare the Broth:

  • Rinse the beef bones under cold water, then place them in a large stockpot. Cover with water and bring to a boil. Boil vigorously for 10 minutes, then discard the water and rinse the bones.
  • Add the charred onion and ginger to the pot along with the beef brisket or chuck, star anise, cloves, cinnamon sticks, cardamom pods, and coriander seeds.
  • Toast the spices in a dry pan until fragrant, then add them to the pot. Add vegetable oil, fish sauce, and sugar.
